Mushroom Risotto
One of our top sellers! Our mushroom risotto is creamy, hearty, vegan and sure to satisfy.
Serves: *2 people; 190 g
Ingredients: Arborio rice, Cremini mushrooms, shallot, vegetable stock, thyme, white wine, nutritional yeast, vegan butter, Dijon mustard, lemon juice, pepper, salt.
Needs: Pot, water, heat source.
Directions: Pour contents of pouch into a pot with 2 1/2 C water. Bring to a boil, immediately reduce to a simmer, stir, and cover with lid. Cook 5 minutes, remove lid, and continue to cook for another 5 minutes, stirring frequently until rice is cooked and has thickened to a creamy consistency. Let stand 3 minutes, and then serve as-is or top with something light and crunchy like Urban Grow Farms micro greens!
