Our popular mushroom risotto, but with an extra dose of mushroom!

We've added big slices of mature, organic Portabella mushrooms to this bag of risotto, making it "meatier", extra filling, and even more flavourful!

Did you know that Creminis are just Portabella mushrooms before they reach maturity? Yet if you ate the two side by side, you'd definitely pick up on a difference in taste and intensity. As they mature, Portabella mushrooms develop a deeper, earthier taste - if you are a mushroom lover, this is the risotto for you!

Ingredients: Arborio rice, Cremini mushrooms, Portabella mushrooms, shallot, vegetable stock, thyme, white wine, nutritional yeast, vegan butter, Dijon mustard, lemon juice, pepper, salt.

Needs: Pot, water, heat source.

Directions: Pour contents of pouch into a pot with 2 1/2 C water. Bring to a boil, immediately reduce to a simmer, stir, and cover with lid. Cook 5 minutes, remove lid, and continue to cook for another 5 minutes, stirring frequently until rice is cooked and has thickened to a creamy consistency. Let stand 3 minutes, and then serve as-is or top with something light and crunchy likeUrban Grow Farms micro greens!
