Taking beets to new heights with our Beet Risotto!

Directions: Bring Risotto to a boil with 2 1/2 C water, covering with a lid. Once boiling, reduce to a simmer, remove lid, & cook until water is absorbed, & rice tender (10-15 mins total), stirring gently but frequently to keep from sticking. Serve warm and enjoy!
